Ingredients
1 cup cottage cheese (full-fat)
1/2 cup almond flour
1/4 cup unsweetened cocoa powder
1/4 cup powdered erythritol (or your preferred keto sweetener)
2 large eggs (pasteurized, or use 1/4 cup Greek yogurt for no raw egg option)
1/4 cup sugar-free dark chocolate chips, melted
1 tsp vanilla extract
1/4 tsp salt
Instructions
1. In a blender or food processor, blend the cottage cheese until it’s completely smooth and creamy.
2. In a large mixing bowl, whisk together almond flour, cocoa powder, powdered erythritol, and salt.
3. Add the blended cottage cheese, vanilla extract, and either pasteurized eggs or Greek yogurt to the dry ingredients. Mix until smooth and well combined.
4. Stir in the melted sugar-free chocolate chips until the mixture becomes thick and fudgy.
5. Chill the mixture in the refrigerator for about 30 minutes to firm up.
